Easy gluten-free casseroles to help you solve the "what's for dinner" dilemmaWhile I often look for easy casserole recipes during the coldest parts of the year, I also search them out during other busy times. The only exception is the heat of summer. Then I avoid heating my oven like the plague. But spring just started as I write this, and we still have some cold, blustery days like today.  I find myself craving comfort food AND I’m tired. I don’t know if it’s the switch to Daylight Savings Time, but my energy sags in the evenings. I’m dragging by late afternoon and dreading dinner prep.

Easy gluten-free casseroles and skillet dinners to the rescue! I asked some fellow bloggers to send me their go-to recipes for those days when you want something delicious that doesn’t require a lot of effort.

Dump and Go GF Chicken Alfredo Casserole

One of my favorite quick-prep recipes when I want a comforting casserole is this Dump and Go Chicken Alfredo Casserole. Grease your baking dish, then whip up the ingredients right in the pan. This low-carb Chicken Fajita Casserole from Budget Delicious looks, well, delicious. It’s super-easy and is ready in just 30 minutes. I like 30-minute recipes for those busy weeknights when time and energy are in short supply.

GF Chicken broccoli casserole

This super-easy Chicken Broccoli Casserole from Dancing Through the Rain uses just five ingredients. It calls for riced cauliflower, which ramps up the veggie factor. I have a chicken broccoli casserole recipe that calls for a can of cream of chicken soup, something that is costly when GF or adds complexity if you  make it from scratch. I like that this version doesn’t need it, which also makes it a little healthier.

BBQ Chicken Casserole

Combining sweet potatoes, barbecue chicken and cheese in a casserole is genius, if you ask me. Thanks to Wholesome Family Living for this yummy recipe for BBQ Chicken Casserole. Just make sure your barbecue sauce is GF. Most of them are.

Because my hubby’s family raises cattle, I have a freezer full of great quality lean beef, most of it ground. I’m always on the lookout for great new recipes using ground beef.

Plowing Through Life offers a Keto Ground Beef and Bacon Casserole that blends beef, veggies, two kinds of cheese and taco seasoning and tops it off with bacon bits. I’ll admit I’m a sucker for Mexican flavors and particularly fond of recipes using taco seasoning, so I’m definitely giving this one a try.

GF Shepherds Pie

If you adore Shepherds Pie as much as I do, take a look at this recipe for Shepards Pie from Create Kids Club. What’s not to love about savory ground beef and veggies blanketed by creamy mashed potatoes? Okay, so technically, for the Brits and purists out there, shepherds pie is made with lamb and cottage pie with beef, but I don’t eat lamb. And I don’t care what you call it. It’s delicious! If you’re not afraid to make it a little more decadent, sprinkle some cheddar cheese on top before baking. You’re welcome.
