Instant Pot Stuffed Pepper Soup

This hearty soup combining peppers, beef, rice and tomatoes is gluten-free and ready in just 30 minutes.

Ingredients

  • 1 lb. lean ground beef
  • 1 medium chopped green bell pepper
  • 1 medium chopped red bell pepper
  • 1 can 15 oz. diced tomatoes
  • 1 can 16 oz tomato sauce
  • 2 T. brown sugar
  • 2 T. gluten-free worcestershire sauce check label as some brands contain soy sauce or malt vinegar
  • 4 cups low-sodium beef broth
  • 1 cup long grain rice
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. Set Instant Pot to saute and brown ground beef. 

  2. Add all other ingredients and stir.

  3.  Set manual high pressure for 10 minutes, then allow to release naturally for 5 minutes. Do quick release and serve.
